Light on the Goddess.
If you’re needing a snack or app to take to a rager, a friend (shout out LHP!) recently spoiled us with this delight. I’ve changed it slightly as not to rip off our sweet Ina Garten. (It’s pretty much her Green Goddess dressing but spicier and leaner). I tweaked it a bit to make it a little more fig-ya friendly.
As you are learning, I’m not great at actual recipes, but I’m always open to follow-up questions.
Shrimp– Coat 1 pound cleaned, tail-on shrimp in olive oil, salt and pepper. Roast in oven at 350 degrees for ~12-15 minutes until a little past pink. (Top with red chile flakes?)
Sauce– We’ll call it “skinny goddess” sauce and just go ahead and “cheater brand” everyone!
In a blender or processor, combine:
2 c plain, nonfat yogurt
1 jalopeno (carefully remove ribs and seeds if you don’t like the pep)
handful of basil
handful of parsley
3 scallions rough chop (white and green parts)
2 celery stalks rough chop
2 garlic cloves
2 teaspoon anchovy paste
salt & pepper
The colors are perty for presentation and together it makes quite the crowd pleaser. Left over sauce is scrumptious on tacos, burgers– anything really.
We give this a major green light.
