Monday & the Missing Meat: Spill Them Beans.

In case you are in a pickle and no time for the supermarket sweep, this recipe has most ingredients you might just have around your pad. I always give the disclaimer that while I love to cook, I’m horrible at remembering what I did to achieve said dish. So, again,  I’ll give you the ingredients and basic instruction and let you give it a go.

 

Black Bean Burger:

1 can black beans

1 egg

2 cloves garlic

½ white onion

1 jalopeno (seeded?)

1 medium “grab” of parsley

Breadcrumbs

Cumin

Chili powder

Hot sauce

 

(Preheat oven to 325 degrees.) With the back of fork, mash rinsed, drained black beans in a bowl. In a blender/processor pulse onion, garlic, jalopeno, parsley. Combine all in the bowl with the black beans. In a separate bowl whisk egg, cumin, hot sauce and chili powder. Add to black bean mixture. Last, add breadcrumbs (gluten-free?) to the mixture until a patty-forming consistency….Maybe ½ cup? Form the patties and cook ~12 minutes on each side in the oven.

 

I threw the patty over arugula with avocado and onion, and hubs did a bun with the works. Aaaand I didn’t even mind having left overs for breakfast with eggs.

 

If you’re lucky your kiddos might eat it (minus the peppy stuff). Mine didn’t, of course. Much like when I made a chocolate cake with chocolate icing (laced with pureed zucchini, hemp  and chia seeds) and my youngest who eats nothing but junk and raisins  just glared at it on the plate. It’s like he knew it had nourishing potential just by its mere presence. And in turn, refused it; the most highly skilled tiny nutrition detection officer. Right now he is winning– but I’m not giving up just yet…..
