Relish in Summer This Weekend.

Happy Birfday Week/end, America!

If you’re attending any splash parties or backyard BBQs in the week ahead and don’t want to arrive empty handed, here’s a mega easy family tradition in a jar you can whip up and gift to your host/ess. Or just leave it on the stoop as a friendly neighborly gesture and have a trusty watch dog keep an eye on it. (Thanks Bodie Girl.)

*(Mama Jean’s) Summer Relish* It could not be easier to make– and it’s for anyone who likes anything pickled, especially pickles. Make it in a snap and the longer it sits in the fridge, the better.

I think the layering looks pretty for presentation, but it gets all mixed up anyway, so no pressure on that. The perty colors do all the work to make it easy on the eyes anyway!

I can usually get 1.5 cukes and 1.5 white onions diced to fit in something the size of a “standard” pickle or mason jar.

Chop, drop and top with white vinegar.

Done. Slap a bow on it and you’re set. We call it relish because we put in on everything: hamburgers, beans & rice, pork tenderloin, cheese, boring veggies, sandwiches…I’ve even been known to dive in late-night and throw it on a cracker. Pairs well with all booze.

If you think about it, you could play with a lot of things in a jar of vinegar if cukes and onions aren’t your thaang—-carrots, beans, jalapeños, peaches, moonshine…

Cheers to you and your festive and/or relaxing week ahead. Snap, Crackle, Pop.
