Monday & the Missing Meat: Turn the Beet Around.
So the health-kick DID actually get started on a Sunday this week, which led to some leftovers making this meatless Monday morning a snap! This is the bowl of goods before it was “dressed” –(oh, my! privacy please! (haha)). Included here are boiled sweet potatoes and beets. (If you’re one of those that doesn’t think beets deserve to live, just find another way to approach them. Beets are RIDIC good for you in more ways than you could ever imagine. And they are versatile, easy to cook and so pretty on a plate!) Also in the fold here are a handful of leftover parsley, chopped cucumber and a sliced cayenne pepper. After this photo, I mixed some plain yogurt, stone ground mustard and lemon together and whisked the gang together a bit. It will keep you full and energized (for a Mondee, that is ;).
My apologies if you are a person that wants to follow a recipe. You got the wrong gal for that. I never record deets of anything I do in the kitchen, so I’ll just throw some ingredients out to you here and there, and let you be your own wizard.
