Monday & the Missing Meat
If you’re like any of the adults in this house, you may be a little “less kind” to your body on the weekends. Aka, funneling booze, chain-smoking old, found, “emergency” ciggs or having dance parties til the wee hours. JUUUUUUUST KIDDING. We have children, people. We would never behave in such a way. Ehhhh, but we do let the “rules” slide a little. Then, slap!, Sunday night rolls around and we get on this health kick—“I’m never drinking again. Ever. Barf.” And we aim for meatless Mondays, as a top of the week jump-off. (It’s way too aggressive to put that health-kick into play on an actual Sunday when the Scaries have parked themselves on your anxiety ridden chest.)
Not sure if some consider egg a form of meat; I don’t. Thus, here is my Monday & the Missing Meat series kick-off. This was a morning meal. I eat small meals throughout the day…this was my first (and biggest til dinner), which I had around 9:30 AM. Everything from the garden. Not my garden, but somebody’s. The eggs, courtesy of Mr. Eswine’s chickens at Savannah Country Day School. Thank you!
I tend to get compliments on my scrambled eggs and my cooking technique, which all rooted from pure laziness after having the first kiddo. I heat up a good amount of olive oil in the skillet and then crack eggs right into the pan. I let them sit and cook about 45 seconds and then just give them a few whips around with a wooden spoon. A touch of salt and Viola! You get a little white in there that makes them soft and not rubbery. (Sounds a liiiiiiiiittle like LuAnn’s Eggs ala Francaise, if I’m not mistaken, for all you Bravo/RHONY watchers :)
Keep eating clean, lean and mean…..at least until Lady Weekend rolls around again. Damn, she fierce.
